First week of School

Last week was my first week of classes at Westminster. I'm actually really excited about how my first two days went. The classes are pretty small and I'm going to get all the attention I need. All of my instructors seem very willing to help me succeed. Westminster has a very good reputation for teachers and they will do whatever they can to keep that. I guess I'm just lucky :)

My first day of classes :)

She's so cute!

Such a silly kitty

My new food for this week was Zucchini bread. It was DELICIOUS! I made some little muffins too so Neight could grab some on his way out the door in the mornings. I was silly and forgot to let the loaf cool entirely before trying to take it out of the time. Oops. Next time I won't make that mistake.

Yummy, yummy!

'Twas the week before school starts.....

......... and all through the house, all the creatures were stirring, even the mouse. Okay, so not really, but this last week has been SUPER busy! I swear I haven't really had any time with Neight, but such is life. This week I was able to pick up an extra 10 hours at work (yay! me) but it made the week SOOOOOOOOOO long!

School starts on Wednesday, and I'm not sure how I feel about it. It will be fun and exciting to go to a new school and to have homework to keep me company (how sad is that?) But I am also TERRIFIED to go to a new school. I'm also terrified to take my Spanish class. YIKES! I'm sure I will be fine, it's just going to take a few weeks to get into the groove of things. This semester promises to be very busy, I'm taking 15 credit hours while working 30 hours! Holla! ;) It's not like that's a HUGE change from last semester, only a credit more, but it's the Spanish class that's psyching me out!

Everyone is calling today the "last day of summer" because in Utah you really can't do much on Sunday, and just my luck, I got to work. So here's a picture of that:

I think this picture is HILARIOUS!!! I can't help but laugh at myself every time I look at it :)

One thing I'm going to try to start is making a new food or dessert each week. Hopefully by doing this it will help me gain knowledge for when I'm a stay at home mom with our four kids :) Although, we will probably only have two because if we have four Neight says I have to drive a van and I will NOT do that :) It's just not my style.
Anyway, this week I tried a Parmesan Chicken. It wasn't super hard, which was nice because I didn't have a whole lot of time to prepare it or cook it. I cheated and used store bought garlic bread and spaghetti noodles, but they were just as delicious. Along with the chicken Neight grilled some zucchini that he got from one of his co-workers. This zucchini was HUGE and we still have a lot left over, so I think for next week I will be making zucchini bread, and no, I have never made it before, believe it or not :)

Yummy, yummy, chicken!

The friends that got away

As I was lying in bed this morning, trying to figure out what I needed/wanted to do today, my mind started to wander back to high school and the friends that I had. I don't really talk to any of those friends anymore, and it is just as much my fault as it is there, but I can't quite figure out why. There are many variables, first; I was pretty stressed out my senior year and probably not the nicest, but I didn't think I was THAT mean, but I could be very wrong. Second, a year after high school I got married, which put me into a completely different stage of life than my friends and whatever we did have in common kind of got thrown out the door. Third, we all got busy, moved away to different colleges, and had crazy work schedules. Now, I know that I can take the initiative and be the one to start those friendships again, but, what if, and it's very possible, that those girls don't like the person I've become?

If my friends from high school are "the real deal" then there really shouldn't be any problems because we did go through a lot together. Our teen years were awkward and the majority of my friends had braces and we were all so excited when someone was able to FINALLY get them off. As friends, we got through crazy, hard classes, we had to deal with teachers that weren't so nice to us, we learned to drive together, we all had to find dates to those dances, and then deal with the, sometimes awful, day activities, we studied and took the ACT together, we applied to colleges together, and we made it to graduation together.

Now, don't get me wrong, I'm not trying to throw a pity party for myself, I'm honestly just trying to work through what really happened.

Day 30

A photograph of yourself today + three good things that have happened in the last 30 days

Because this "challenge" has taken me longer than 30 days to complete I am going to pick 3 good things that have happened since I started the challenge. The first day was June 27th and since then:

1- I have a working car :)
2- Neight and I moved into a house (even though we still don't know when we're closing on it. It's complicated)
and 3- Emily came to visit for the 4th of July :)

Oh, and here's the picture

Day 28

Your favorite movie.

I enjoy watching SOOOOOO many movies that it's very hard to pick a favorite. For the longest time my favorite movie was, How to Lose a Guy in 10 Days, but my favorite movie is now, The Princess and the Frog.

The music is so catchy and it's an adorable story! I watch this movie over and over and basically have it memorized. I also love the "vintage" era that it is set in. I could go on and on about this movie, but it's basically the same thoughts, just how awesome it is! I love that Disney made this movie.

Day 27

A picture of you last year and now and how have you changed since then?

Then

Now

It was very hard for me to find a picture from last year. I'm definitely not the kind of girl that takes a million and a half pictures of myself and I don't really do anything fun to take picture of.

So, about a year ago I decided to try blonde. It took a while to convince Neight to agree with me, not that I really needed his approval, but more of an agreement that it would look good. This year I am closer to my natural hair color and my hair is about twice as long as it was last year. I haven't had an actual hair cut since March of 2010, but I have had a few trims in between.

Since last year I have also lost 9 pounds and I have been able to keep it off. Last year Neight and I moved from a two bedroom apartment to a one bedroom apartment, this year we moved from the one bedroom apartment to a decent sized house. Last year I had a small, adorable, little kitten and now I have a big, bratty, cute kitty. Last year I was a student at Salt Lake Community College with no degree and this year I am a student at Westminster College and I have an Associates degree in Science.

That's about all that I can think of that's changed in the last year, nothing to exciting.

Day 26

A photo of somewhere you've been to

I don't really get to travel much, but my most favorite place to go is Disneyland. When we went this year, this is the sign that welcomed us to the "Happiest Place On Earth."

Day 25

What’s in your purse?

For the longest time I refused to use a big purse/bag, but I gave in when I started working and having class on the same day. So, today, in my purse I have the book "Wuthering Heights," a Taylor Swift CD, check books, registers, a wallet, a day planner, my work keys, and vitamins. The vitamins have been in my purse since we moved. Pens, pencils, a brush, and lip gloss. Oh! and I can't forget my water. I love my water and I drink at least two liters a day. It's a crowded bag and I keep looking for one that can be more organized because it drives me crazy having to dig through it to find small items that fall to the bottom.
